Felino Salami

Felino salami made strictly with chopped pork, salt, pepper, wine and garlic as needed; once stuffed into the natural casing, it is tied with string and left to hang for aging, which must be at least one month. This salami has a firm texture and a ruby red color, as per tradition it is sliced with an oblique “flute beak” cut.
