Bresaola is a Protected Geographical Indication cured meat made from beef, salted and cured, which is eaten raw. Rich in protein and low in fat with a low caloric intake, Bresaola IGP also provides branched-chain amino acids-Leucine, Isoleucine and Valine-in proportions similar to those recommended for dietary supplementation for athletes. It is also naturally rich in vitamins B 1, B6 and B12. Important mineral salt content, especially iron, zinc, phosphorus and potassium. Carbohydrates, calcium and vitamin D are absent, which can be supplemented by combining bresaola with bread, some grana flakes and a few drops of lemon juice.
