White wine – Montefalco DOC Grechetto

Grapes selected from the Grechetto Cru already in the field and harvested in the early hours of the morning, at the minimum temperatures of that period and cooled upon arrival in the cellar, thus avoiding both oxidative phenomena that could compromise the aromatic potential and the start of unwanted fermentations.

White vinification with soft pressing of the grapes in an oxygen-free environment so as to slow down the oxidase activity of the enzymes as much as possible. Static decantation for 24 hours to clean the must, inoculation with selected yeasts to trigger alcoholic fermentation. Fermentation took place at low temperature for 5-6 days in steel silos. 10% of the mass was decanted halfway through fermentation and the alcoholic fermentation continued in barrique.

Part of the wine underwent malolactic fermentation in barriques. Maturation of the wine masses through aging on the yeasts in barriques and in steel for 4 months. Assembly of the masses and further period in steel, then in bottle for another 2 months. Intense straw yellow color tending towards golden. On the nose it presents the typical scent of yellow peach, citrus fruits and broom flowers.

References of exotic fruit such as mango, with a finish of Mediterranean scrub and asparagus. In the mouth it is preferred for its freshness and flavor which however do not compromise a pleasant softness. Alcohol: 13.5% vol To be served at a temperature of 12/14°c, paired with truffle first courses, spiced chicken and baked fish.

Aging: In barriques for 8-10 months and 6 months in the bottle.
